I have a Vodafone UK supplied k770i which has been unlocked (those nice people at Vodafone sent me the code for nothing) but is still full of crapware (demo games, ebay app, old version of Google Maps) that I can't uninstall through the UI, or upgrade.
Do I need to flash the phone's firmware to remove this? Or is there some other trick I can use. I'm not really looking to get extra features, or debrand. Just want to update to Google Maps which will find my location, and get rid of those useless games.

Use SEUS to update to the latest FW, and the easiest way to delete the crap Java apps is by deleting them from your FileSystem with a tool like JDFlasher or XS++

Personally Corman I wouldn't advise him to use SEUS in case he has CID52 which would then be CID53 and make other modding like patching a bit more difficult. It would also limit the tools he can use.
dunxd, Connect your phone to XS++3.1. If you get "Sorry your phone is not supported" then you have CID53 and so you'll need to use FAR + JDFlasher to access FS. (DB2020 script then OFS)
If its CID52 then use the FSX tool in XS and navigate to tpa/preset/system/ams and delete the *.jar and *.jad files you don't want. If you want to delete ALL java then delete ALL the files in that folder including all the XXXXXXXXXXX.b files.
