I want to flash my K800 to K810 and I got really messed up with the firmware files I need.

Regarding your PM,
Well, if you were to send it in for repairs, theres a probability that they detect your phone was flashed. So if you want to be rock-solid-sure, don't do it. (I got by by telling them I bought it from ebay before )

Is there's any way I could run flash menus on my phone without flashing it?
Like a .vkp patch or something?

cant view the video given im on work computers, but I imagine its the video of the K800 using animated GIF icons. This is different from flash.....

Nope it isn't. They certainly look like real flash files - just very laggy. But it could be a fake, maybe someone changed the model info in customize.xml and flashed into another phone.

The surrounding area is all dark - only the screen can be seen.

Ohh... And by the way, at the beggining of the video he shows a screen says it's a K800
But, it could be fake, I dunno.
